Dinner: An Icelandic Feast Presented by A Taste of Iceland 

The Icelandic Culinary Team's Manager, Chef Snaedis Xyza Mae Ocampo, and Chef Olof Olofsdottir, in collaboration with the James Beard Foundation, will prepare a delicious pop-up menu inspired by Icelandic ingredients and flavors.

Enjoy an Icelandic culinary experience at Platform at Pier 57 on Friday, September 6.

Ready to taste a plate full of Iceland? Icelandic Chef Snaedis Xyza Mae Ocampo and pastry Chef Olof Olofsdottir, in collaboration with The James Beard Foundation, will prepare an Icelandic feast, drawing inspiration from the award-winning courses of the 2024 Icelandic Culinary Team. Indulge in a showcase of Iceland's finest ingredients and flavors, crafted into an outstanding dining experience. The menu will feature centerpiece ingredients from Iceland, including cod, lamb, and skyr.

The Menu

Dining Table $170 | Internal Chefs Counter $185 | External Chefs Counter $150  With Wine Pairing

  • Canape

    • Icelandic cod skin crackers & angelica mayo • Icelandic lamb taco • Smoked haddock with Skyr & rye bread

  • 1st course

    Pan-fried Icelandic cod loin, smoked cod salad, pickled cucumber & white wine sauce. Served with cod mousseline, cherry tomato “confit”, haricots vert quinoa ragout, and white wine sauce.

  • 2nd course

    Roasted Icelandic Lamb loin, crispy skin, buckwheat and ramson capers, gnocchi potato filled with pulled lamb, and lamb jus. Served with Paté choux pastry filled with mushrooms, Feykir cheese foam, whey glazed carrot, and Mornay sauce. Ragout of chanterelles, green peas and kohlrabi.

  • 3rd course

    Icelandic Provisions Skyr ganache with wild crowberry and bilberry compote.

  • 4th course

    Chocolate mousse filled with raspberry, lemon meringue, almond cake, and raspberry caramel. Served with, crème fraiche & lemon thyme ice cream,apricot terrine, whipped caramel chocolate ganache and glazed raspberry.

Snaedis Xyza Mae Ocampo

Chef Snaedis Xyza Mae Ocampo is the Head Chef at ION Adventure Hotel and has been the Team Manager of The Icelandic Culinary Team since 2023. She is currently training for the Culinary World Cup in 2026. Competition has played a decisive role in her professional journey, beginning as a Culinary Team assistant in 2015. She ascended to Team Manager from 2017 to 2020, leading the team to a gold medal at the Culinary World Cup in 2018. She also secured two gold medals and an overall third place at the Culinary Olympics in 2020, marking the first time the Icelandic team reached the podium.

Olof Olofsdottir

Olof is a Pastry Chef at Monkeys restaurant in Reykjavik, Iceland. She is the winner of the Dessert of The Year competition in 2021. Olof is the author of the pastry book "Omotstaedilegir eftirrettir," (Irresistible Desserts), published in Icelandic in 2023. Chef Olof is a pastry chef on the Icelandic Culinary Team, winning two gold medals and an overall 3rd place IKA Culinary Olympics 2024.

Iceland's National Culinary Team won bronze at the 26th IKA/Culinary Olympics in Stuttgart, Germany. The competition featured over 1,200 chefs from 55 countries, showcasing over 7,000 menus. The event included a Chef's Table with an 11-course menu and a three-course meal for 110 guests. Finland won gold, while Switzerland took silver. Iceland's performance was remarkable, particularly its lamb dish, which demonstrated exceptional creativity and skill. The IKA/Culinary Olympics is known as a significant platform for culinary professionals to display their talents and set new trends.
